| Charred Cauliflower and Smoked Salmon Fusilli |
Welcome back foodie!
A LOT of food has graced my plates and passed my lips since I last posted, so I'm going to start working back through all of the delicious meals we've been enjoying so that you can enjoy them too!
I'll start with this fabulous dish that is an absolute breeze to make.
With just a few simple ingredients and 20 minutes of your time, you can be chowing down on this super tasty and satisfying dinner. To be honest, this is the kind of thing that I would call comfort food, but it's actually good enough to serve as a main meal at dinner parties!
This is a humble pasta dish, bursting with charred cauliflower and sprouts, silky smoked salmon, goat's cheese, mustard and lemon juice.
The earthy flavours of cauliflower and sprouts are the perfect partner to the slightly sweet, luxurious salmon. Left a little al dente, the vegetables provide a welcome crunch against the silky soft salmon and fusilli. The lemon juice adds the just the right amount of zing to bring the flavours to life, and the cheese and mustard create the most heavenly coating on the pasta. This dish just has it all!
This is so quick and simple to make I don't feel the need to post a full recipe. You simply char your sliced cauliflower and sprouts in a very hot frying pan with a touch of olive/vegetable oil until slightly blackened, then deglaze the pan with lemon juice, add a touch of the pasta water and continue to cook very gently on a low heat until the veg has started to soften. Stir some goats cheese and a good dollop of mustard of your choice through your hot, cooked pasta, then add the whole lot to the frying pan, season well and cook for a couple of minutes until everything is coated nicely. Remove from the heat, and stir through some thinly sliced smoked salmon before serving sprinkled with fresh parsley. Ta dah! How easy was that?
Tasty, easy, speedy and satisfying. A perfect midweek meal for busy people with busy lives.
