Say hello to this delicious bowl of Italian goodness.
Chicken Arrabbiata is a classic comfort dish of chicken cooked in tomatoes, flavoured with garlic and gentle spices and often served with olives.
To me this is the absolute ideal partner for pasta, and what better pasta than spaghetti! I chose wholemeal not just because it's supposedly "healthier", but because I adore the nutty flavour and the way the sauce clings to it like the pair depend on each other.
In an ideal world I would have great big parmesan shavings atop this wonderful dish, but my intolerance calls for a creamy, salty goats cheese instead, which isn't entirely a bad thing. With the sweet, spicy sauce and the tangy olives this is a match made in comfort food heaven.
