Welcome back foodie.

I had an intense day of training at work today, and was pretty hungry by the time I got home. I had started cooking vegetables
with the intention of making salmon and asparagus risotto, but the smell of the celery frying made me want something spicy and fresh! 

So I did a quick rethink, and decided to go with lemon and ginger chicken, cooked in a creamy coconut sauce with minced garlic and ginger, fresh lemon juice, coriander, cumin and turmeric. I made it into a biryani style dish with cooked brown rice and quinoa stirred right into the sauce, and some fresh spinach gently folded through to finish. I served it with a handful of fresh baby spinach leaves, a huge dollop of lime pickle and my favourite toasted mixed seeds (pumpkin, sunflower and pine nuts.)
